Ingredients:

  • 250 gr Jerusalem artichokes
  • 3 eggs
  • 1 tbsp flour
  •  200 gr cooking cream
  • Extra virgin olive oil
  • Salt

Preparation

Slice the Jerusalem artichokes after having washed them carefully, put in a pan with some oil, cover, and leave to simmer until soft, adding a little water if necessary.

Cool, put in a bowl, and using a blender mix in the eggs, cream, salt and flour.

Put the mixture into the flan molds and bain-marie bake in a ventilated oven for 40 minutes at 170 degrees C.      When cooked, remove from the molds and turn out onto the plates. Serve with a few slices of bacon.
