Jerusalem Artichoke
This plant belongs to a large family that is often confused with the sunflower. Its flowers are indeed a bright warm yellow, but smaller.
Jerusalem artichokes have an irregular, lumpy shape, a reddish skin, are white inside, and taste like an artichoke.
There are two varieties: white, which is the first available from late August. Burgundy, which is available from October to April, and is the most common variety.
