Extra virgin olive oil
“L’ELEGANTE”: quality, authenticity and flavoursome, which combined make this oil a nectar that is worthy of this name.
The olives are harvested by hand or with the use of tools like combs in order to protect the trees. The olives are separated from the leaves by hand and then taken to the mill and processed the same day using mechanical and manual processes only (which includes keeping the temperature below 30° throughout the process). This is designed to ensure that the oil is obtained without altering the quality characteristics contained in the fruit in any way.
The production of this excellent blend of local olives, obtained mainly from the Grignano, Leccino, Favarol and Casaliva varieties makes for a wonderful balance enhancing the elegance of the fresh aromatic herb and tomato leaf scents of a freshly mown meadow in the summer. Harmoniously complementing this top product are the strong notes of almond and bayleaf. On tasting, a spicy part emerges slightly and then unites in an excellent balance with the bitterness, the pleasantness is enhanced with the set of scents given earlier to the nose.
Recommended with fish and shellfish soups, also excellent with meat carpaccios and traditional Italian summer dishes such as caprese or bruschetta with cherry tomato tartare.
